Scope and Content Still house from south-west, Aberfeldy Distillery, Aberfeldy, Perth & Kinross Aberfeldy Distillery was founded in 1896 by the brothers John and Thomas Dewar to produce whisky suitable for blending. It was owned by the Distillers Company Ltd from 1925 and Scottish Malt Distillers Ltd from 1930 before being substantially modernised 1972-3 for John Dewar & Sons Ltd. The site boasted a direct rail link to Dewar's warehouses in Perth until the 1960s. This shows the stills in the modern still house, built 1972-3. The vapour from the still passes through the lyne arm (top) into the vertical condensers (right) before being returned for distillation once more. Two kinds of copper pot stills (called a wash still and a spirit still) are used to turn the wash from the fermentation process into unmatured whisky. Malt and grain whisky must then be aged in oak casks for a legal minimum of three years. These casks may have previously contained either Oloroso sherry or American Bourbon. Maturation in these wooden casks gives the whisky its flavour and finished appearance, and takes place in cool, earth-floored bonded warehouses. Source: RCAHMS contribution to SCRAN.
