Scope and Content Heriot Brewery, Roseburn Terrace, Edinburgh Edinburgh was the brewing capital of Scotland, with more and larger breweries than any other place in Scotland. This one belonged to John Jeffrey & Co Ltd. The firm was taken over in 1960 by United Breweries, and remained in operation until about 1990. This shows the brewery from the Edinburgh & Glasgow Railway, looking across Haymarket Goods Station. The building in the centre had been the maltings, but had by 1965 been converted, probably into a tun room, where the worts (malt liquor) were fermented to make beer. Since 1960 there has been a marked decline in the importance of the brewing industry in Scotland. The elimination of almost all heavy manual labour has been an important factor, as have changing tastes. There is now only one brewery in Edinburgh, at Fountainbridge.
