Scope and Content Dumbarton and Inverleven distilleries, Dumbarton (West Dunbartonshire council area) These distilleries were founded in 1938 by Hiram Walker and Sons (Scotland) Ltd, the Scottish subsidiary of Hiram Walker-Gooderham and Worts, of Canada. Dumbarton is a grain whisky, and Inverleven (with Lomond) was a lowland malt whisky distillery. This view shows some of the fermenters, the grain whisky equivalent of washbacks in a malt whisky distillery. In these vessels yeast acts on the sugary wort to turn it into wash for distilling in the continuous still. The cooked maize went to a msh tun where crushed malt was added. The enzymes in the malt acted on the starch of the maize to convert it into fermentable sugars. Source: RCAHMS contribution to SCRAN.
