Scope and Content Dumbarton and Inverleven distilleries, Dumbarton (West Dunbartonshire council area) These distilleries were founded in 1938 by Hiram Walker and Sons (Scotland) Ltd, the Scottish subsidiary of Hiram Walker-Gooderham and Worts, of Canada. Dumbarton is a grain whisky, and Inverleven (with Lomond) was a lowland malt whisky distillery. This view shows the control panel for the maize cookers, in which crushed maize was cooked under pressure to release the starches so that they could be converted into sugars for fermentation. One of the cookers can be seen to the right of the panel. The cooked maize went to a mash tun where crushed malt was added. The enzymes in the malt acted on the starch of the maize to convert it into fermentable sugars. Source: RCAHMS contribution to SCRAN.
