Scope and Content Arniston House, Midlothian, from north-east This shows the main entrance front of the nine-bayed, three-storeyed house. The porch is extended into the forecourt and features a carved stone pediment, a design which echoes the larger pediment between attached Ionic columns above. Two-storeyed pavilions flank the main building, joined to it by curved links. The two pavilions were designed to house the kitchens (east) and stables (west). Further service buildings were built behind the pavilions. Building the kitchen away from the main house in the basement stopped cooking smells from reaching the family and guests, but the distance to the dining room made it necessary to construct an elevated pulley-driven railway to transport food to the table before it became cold. Arniston House, the seat of the Dundas family, was built in the Palladian style from 1726 onwards by architect William Adam (1689-1748) on the site of a c.1600 U-plan tower-house. His son John (1721-92) added the west wing and orangery in 1753. The house was further altered during the 19th century, and comprises a central three-storeyed block with flanking two-storeyed service pavilions joined to the main building by two-storeyed links.
