Scope and Content Interior of kiln, Kippering house, Albert Street, Wick, Highland The kippering-house on Albert Street in Wick is typical of its type. Though not well preserved, it does have a good example of a kipper-kiln where herrings were smoked to turn them into kippers. The herrings were smoked in the space above the fire. They were hung on tenter-hooks which rested on the horizontal rails. The smoking process took six to twelve hours. Source: RCAHMS contribution to SCRAN.
