Scope and Content Section of kipper-kiln inside kippering-house on Albert Street, Pultneytown, Wick, Caithness The kippering-house on Albert Street in Wick is typical of its type. Though not well preserved, it does have a good example of a kipper-kiln where herrings were smoked to turn them into kippers. This shows the workers climbing up inside the kiln voids, emptying and filling them with herrings loaded on tenter-sticks. Once a kiln void was full, the fire was lit and the smoke turned the herrings into kippers. The smoking process took six to twelve hours. Source: RCAHMS contribution to SCRAN.
