Scope and Content Washbacks at Port Ellen Distillery, Islay Port Ellen Distillery was founded in 1825 by A K Mackay & Co. It changed hands several times in the early 20th century, and fell into disuse in 1929. It expanded and reopened in 1966-7. The large circular containers or washbacks hold the wort and the yeast whilst they are fermenting. The traditional washback made of pine, larch or oak is still used in many distilleries. This is due to the good insulating properties of wood. To make whisky, barley is allowed to germinate into green malt. This is dried, milled, and mixed with hot water to make wort which is extracted and fermented with yeast. The results are distilled to produce raw whisky which is then matured in casks.
