Scope and Content Drying-kiln at Dallas Dhu, Forres, Moray Dallas Dhu was built in 1899 by Alexander Edward. It was inactive between 1930 and 1936 and the stillhouse was rebuilt after a fire in 1939. The drying-kiln is used to dry the malt after germination. Malt is carried to the top of the right hand tower by a continuous lift and then dumped through the chute onto the drying-floor in the attic above the furnaces. To make whisky, barley is allowed to germinate into green malt. This is dried, milled, and mixed with hot water to make wort which is extracted and fermented with yeast. The results are distilled to produce raw whisky which is then matured in casks. Source: RCAHMS contribution to SCRAN.
